Mashed Persimmons with Coconut Syrup
Ingredients
- 3 Persimmons, very ripe
- 4 oz. coconut syrup (or melted butter)
- 2 eggs
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 tbsp spice mix of your choice (ginger, cardomom, allspice, etc.)
- Cinnamon extract
- 1 cup cooked quinoa
- 8 oz Coconut milk powder
- Cashews
Instructions
Combine all ingredients. Bake at 300° for 1/2 hour, check, and bake for an hour. Check progress after 1/2 hour. Adjust baking time if needed.
