Mashed Persimmons with Coconut Syrup

Ingredients

  • 3 Persimmons, very ripe
  • 4 oz. coconut syrup (or melted butter)
  • 2 eggs
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp spice mix of your choice (ginger, cardomom, allspice, etc.)
  • Cinnamon extract
  • 1 cup cooked quinoa
  • 8 oz Coconut milk powder
  • Cashews

Instructions

Combine all ingredients. Bake at 300° for 1/2 hour, check, and bake for an hour. Check progress after 1/2 hour. Adjust baking time if needed.
